Atlantic Cod, Lobster Sauce, Oriental Yams, Chanterelle Mushrooms, Garlic Scapes and Jerusalem Artichoke Puree






















Food, wine and great company is all I need to be happy.  In this case we had a lot of all three. Thanks Michal, Harout, Caitlin, Padraic, Tara, Dre and Kristin for making it all happen.  These recipes feed 8 people and cost about $100.  Total cooking and prep time is about 2 hours.

Cod with Lobster Sauce
8 filets of black cod, about 3 lbs
1 shallot, fine dice
1/4 stick butter
1/2 cup vegetable stock
4 oz creme fraiche
1 lb white shrimp, 25ct peeled deveined and halved long way

Preheat the oven to 400. Season cod with salt, pepper and olive oil then lay them flat on a greased, foil-lined baking tray.  Roast for about 15 minutes.  Remove with a spatula and place in a large serving tray.  Top with cream sauce.

In a medium sauce pan start the butter, shallots and garlic on medium heat and let cook until the onions are just turning brown.  Add flour and mix well, keep stiring for 10 minutes or until the flour begins to just get lightly brown.  Add the cream and the vegetable stock and mix well.  Let this cook for about 15 minutes or until reduced by half.  Now add the shrimp and let cook for 10 more minutes.  Serve over top of fish.

Jerusalem Articoke Puree
1/2 lb sunchokes, peeled and large diced
1/2 vidallia onion, rough chop
4 teaspoons extra virgin olive oil
1 teaspoon cream fraiche (or cream cheese)
salt and pepper

Start sunchokes and shallot in a medium pot with cool water.  Bring to a boil and let cook 15 minutes more until the sunchokes are fork tender.  Remove from the heat and strain, reserving 4 teaspoons of the water. Puree in a blender with the reserved water, olive oil and cream fraiche, add salt and pepper to taste.

Yams, Chantrelles and Garlic Scapes

The yams and the mush rooms were cut in half an oven roasted at 400 degree.  The yams took about 40 minutes while the mushrooms only about 12 minutes.  The garlic scapes, which are the green tops of the garlic bulb, were blanched for 2 minutes and then sauteed in olive oil and butter for 2 minutes as well.


Organic Kale, Nectarine, Beet and Yellow Tomato Salad  

Pick thru the kale and remove all of the stems.  Cut roasted beets and nectarines in 8ths.  Halve yellow tomatoes and squeeze juice and seeds out over a fine strainer with a small bowl to catch the delicious tomato water.

Tomato Water Vinaigrette
2 oz tomato water
2 oz white balsamic vinegar
1 tablespoon chopped fresh marjoram
1 teaspoon dijon mustard
salt and pepper
4 oz extra virgin olive oil

Mix everything but the oil.  Then slowly add oil while whisking until mixture comes together.

Lobster and Crab Roll





















I put a little twist on this classic summer sandwich.  We had to kick off the summer with a BBQ and this was a great appetite starter.  I made 16 rolls and had plenty of left overs, so you can make the recipe for half the amount.  This recipe feeds 8-12 costs $60 and takes about 1.5 hours.

1 - 4 lb lobster, steamed and meat removed
1 - 1lb jumbo lump crab, picked thru for shells
8 ramps, thin sliced (shallots are a good substitute)
1.5 sticks premium butter
6oz creme fraiche
1 teaspoon fresh marjoram
salt and white pepper
16 split top hot dog buns

Start a medium saucepan on medium low heat.  Cook ramps for 10 minutes in 1 tablespoon of butter until softened.  Add remaining butter and creme fraiche until melted together.  Add marjoram, slat and pepper and then fold in chopped up lobster meat and lump crab.  Let simmer 10 minutes stir very gently and then turn off the heat.  Let stand 10 minutes.  Spoon meat into toasted rolls and serve with a lemon wedge.  Buon apetito!

Surf & Turf, Purple Cauliflower, Baby Cabbage and Bearnaise Sauce






















The meal was for the Christening of  my friends new apartment at the Jersey Shore along with a celebration of my friend Derek's successful surgery.  A little shopping at Wegmans and the whole thing came together quite nicely.  This takes 2 hours to prepare, costs $70 and feeds 5 people.

Surf and Turf
2 - 2.5lb lobsters, boiled and deshelled
5 - 4 oz Filet Mignons
1 stick salted butter

Boil the lobster for about 10 minutes and let cool.  Remove all of the meat from the lobster and split the tails in halves.  Place all the meat back into a small sauce pan and top with a stick of melted butter.  Cover and heat on low on the stovetop for five minutes right before serving.
Season and then pan sear the filet mignon for 3 minutes on each side on medium high heat.  Place in a baking dish and cook in a 400 degree oven for 8 more minutes.  Let rest 10 minutes before serving.

Purple Cauliflower and Baby Cabbage
In separate pots of boiling water blanch the cauliflower florets and the baby bok choy for about 3 minutes and then plunge them into separate ice baths.  Remove and let dry.  Place florets in a baking dish with some finely diced garlic and shallots, olive oil, salt and pepper.  Roast for 20 minutes at 400 degrees.
For the bok choy just place it on a baking tray and heat in the oven 5 minutes before you serve.

Bearnaise Sauce
1/2 small shallot finely diced
1/4 cup white vinegar
1 tablespoon finely chopped parsley (tarragon is traditional but I didnt have)
3 egg yolks
1 and 1/2 sticks of butter
1/2 teaspoon hot sauce
juice from half a lemon

In a small sauce pan start shallots and vinegar on low heat.  Let cook until most of the liquid is reduced and you have about 2 teaspoons of liquid.  Remove from the heat and add the fresh herbs.  Set aside until later.  In a second small sauce pan start the butter on low heat.  Once the butter is all melted a white foam will be on top.  Use a small spoon to remove all of the white milk solids from the top.  This is know as clarifying the butter.  Remove from the heat and set aside. Now the tricky part; Create a double boiler, a small sauce pan with lightly boiling water and a metal mixing bowl on top.  Add the egg yolks to the mixing bowl and whisk vigorously for about 3 minutes or until they double in side.  Now have someone else SLOWLY pour the warm clarified butter into the eggs while you continue to whisk.  Once the butter and eggs have come together add the remaining ingredients and whisk together.  Keep the sauce in a warm place but not too hot or it will break.  Use to top basically anything.

The food, wine and company were all amazing.  Congratulations to Harout on the new spot, its going to be a great year there.  Words can't say how impressed and proud I am of my buddy Derek who gave his kidney to his mother just one week before this event.  Life is amazing everybody so enjoy it while you can! Butter Poached Lobster, Crispy Artichokes, Bay Scallops, Pistachio Puree and Meyer Lemon


I found some fresh mini lobster tails at Fresh Market for $6 each so I thought this would be a great way to make a spectacular dish on a budget.  This costs under $30 feeds two and takes about 45 minutes.

Butter Poached Lobster
1 stick salted butter
1/2 meyer lemon, juiced
4 tablespoons olive oil

In a very small saucepot start all ingredients over low heat.  Once melted add lobster tails in one at a time for about 15 minutes.  Remove and place in a warm oven to keep hot.

Pistachio Puree
1/2 cup of fresh pistachio, blanched and inner skin peeled
1/2 small potato, peeled, diced and blanched
1/2 white onion, diced and blanched
1/2 meyer lemon, juiced
4 tablespoon olive oil

Boil all ingredients until tender.  Puree in a blender with olive oil, lemon juice, salt and pepper.

Sea Scallops
1 cup bay scallops seasoned with salt and pepper and then sauteed on medium high heat for 4 minutes until golden on one side.

Crispy Artichokes
1 package marinated artichokes.  Remove artichokes and rinse in cold water.  Pat dry and sear in a sautee pan with butter and olive oil until golden.

Seafood Strozzapreti



Strozzapreti is a pasta that is rolled between the fingers to create a tube shape. Strozzapreti means "to choke the priest". There are dozens of stories of why it is called this but either way its great. This strozzapreti is store bought. This takes 30 min, cost $40 and feeds two.

Seaafood Strozzapretti
4 oz lobster meat, chopped
4 oz jumbo shrimp, halved
4 large sea scallops, halved
12oz Strozzapreti dry
1 shallot, diced
5 cloves of garlic, chopped
1 small zucchini, diced
1 small yellow squash, diced
1 cup white wine
8 oz cherry tomatoes, halved
handful of basil, torn into pieces
1 teaspoon crushed red pepper
salt and white pepper

Mix all the seafood with olive oil, crushed red pepper, salt and white pepper. Start water and salt heavily. Add pasta to the water. Start two sautee pans on medium heat. In one add shallots, garlic, zucchini and squash. Cook for 10 minutes. In the other pan start the seafood and cook for five minutes. Add the seafood to the vegetables and add the white wine. Once it cooks off add the tomatoes and the basil. Drain the pasta and add it to the veggies and seafood. Season to taste and serve with some toasted garlic bread. Buon Apetito!

Rock Shrimp and Lobster Risotto topped with Shredded Stone Crab



I was shopping at the supermarket the other day and they had rock shrimp and baby Maine lobster tails for a great price. How could I turn that down... obviously I can not. They also had some great prices on stone crabs so I grabbed a jumbo claw as well. Now I had to figure out what to do with it and then it hit. The most awesome risotto ever. This costs about $25 dollars and can feed 4 people. It takes 1.5 hours to complete. Risotto requires the use of warm water or stock in the preparation. I created my own veg stock for this recipe but you could use water or store bought stock if you wish.

Vegetable and Lobster Stock
1/4 cup carrots, chopped
1/4 cup white onion, chopped
1/4 cup celery, chopped
1 vidallia onion, chopped
cut off pieces and scraps bell peppers
lobster shell, cleaned
parsley stems
thyme
8 cups of water
salt

Start a large sauce pot on medium heat. Add some olive oil and then all the vegetables. Let them cook for 5-7 minutes or until softened. Now add the water, lobster body, herbs and salt. Let that cook for at least 45 minutes.



Rock Shrimp and Lobster Risotto
1/2 organic white onion, diced
1 vidallia onion, diced
1/4 cup carrots, diced
1/2 cup total of red, yellow and orange bell peppers, diced
2 cups Arborrio rice (risotto rice)
1/4 bottle of white wine
6-8 cups of vegetable stock
1/4 cup Romano cheese, grated
1/4 cup Parmesan cheese, grated
2 tablespoons parsley, chopped
salt and pepper

1/4 pound rock shrimp, halved
1 baby Maine lobster tail, meat removed and large diced
3 tablespoon, salted butter

1 jumbo stone crab, meat removed from the shell and shredded

Start a large high sided sauce pot on medium low heat (4 of 10) and add enough olive oil to cover the bottom. Add the chopped vegetables and stir, let cook until the onion is translucent, about 5 minutes. Now add the 2 cups of risotto. Stir the rice until it begins to toast a bit and becomes translucent, about 4 minutes. Now add the wine and stir until all of the wine has cooked off. Now add three ladles of the homemade warmed stock. Stir the rice well until all of the liquid is almost all absorbed. Then add three more ladles of stock and stir it in again until absorbed. Stir the pot every 2 minutes or so, don't walk away. Keep adding the three ladles of stock every time the liquid is almost gone. It should take about 30 to 40 minutes for the rice to stop absorbing the liquid rapidly and begin to get tender. About 5 to 7 times of adding the stock. Once you have added about 3/4 of the stock start the seafood.

Start a small sautee pan on low and add the butter. Once the butter is melted add the lobster and shrimp and let it cook for about 10 minutes turning occasionally. This is called butter poaching.

Turn off the heat on the risotto and add the Romano and Parmesan cheeses and mix well. Add the butter poached seafood along with the butter used to cook them into the risotto and fold it all together, being gentle not to beat up the rice in the risotto. Finish it off with the parsley add salt and some pepper to taste. Scoop it on to a plate and top it with the shredded stone crab, garnish with a parsley sprig.



The stone crab adds a great richness to this dish that is great even without the additional crab. The tenderness of the rice and creaminess of the dish are the keys to making it an amazing dinner. Buon Apetito!

Seafood Lasagna



This is the second part to our dinner party this past Saturday. I made a variation of this dish about 6 years ago and haven't done it since. It is a time consuming and detailed recipe but when you get it all right there may be no other better lasagna in the world. To add to the awesomeness of this recipe my friend Shawn caught some Florida lobsters while out on the boat earlier that day, and fresh is always best. Another big thanks to my buddy Josue for Sous cheffing this dish with me.

This recipe feeds 8 to 10 people and I made two trays (one small, one big). Total time is about 3 hours. Total cost: priceless (about $80)

Seafood Lasagna
1/4 cup pancetta, diced
2 oz EV olive oil
1/2 cup medium white onion, diced
1/2 cup carrots, diced
1/2 cup orange bell pepper, diced
6 cloves of garlic, smashed and chopped
1 lb of u25 peeled, deveined shrimp, cut into 5 equal piece each
1 lb of sea scallops, cut to into the same size as the shrimp (about 4 per scallop)
8 oz jumbo lump crab meat
8 oz fresh Florida lobster, chopped in 1/2 squares (same size as shrimp)
1 lb fresh spinach, chopped
1 tablespoon kosher salt
1 tablespoon fresh cracked black pepper
1 teaspoon fresh grated nutmeg
1 teaspoon fresh oregano, chopped
1/4 cup fresh basil, chopped
1.5 cups of whole milk Ricotta cheese
1 pint of heavy cream (2 cups)
1/2 stick of butter
1 cup grated Parmesan chesse, grated
1 cup grated Pecorino Romano cheese, grated
10 sheets of fresh semolina pasta dough, a little bigger then the lasagna pan.
Here is my Homemade Pasta Recipe (Thickness level of 3 for lasagna)

Get a large stock pot filled with water and about two tablespoons of salt started on high heat. This will be for the pasta which we will cook right at the end.

Start a large sauce pot on low heat (1 of 10). Add the pancetta to the pan and let it cook for about 10 minutes stirring occasionally. This will render the fat out of the pancetta, you could substitute bacon, but pancetta is WAY better. Once the pancetta is browned remove it from the pan, dice it up and reserve it for later, but leave the fat. Add the olive oil and they onions, carrots, garlic, and bell pepper and let cook for 15 minutes or until it almost melted. Turn it up to medium low (3 of 10) and add the seafood, without the crab (its cooked). Stir often to make sure you cook the seafood through evenly, only about five minutes. Now add the crab meat and the chopped spinach. Mix it up and let that cook for 3 minutes. Add the seasonings, herbs, heavy cream, ricotta, butter and the reserved pancetta mix well and cook for 5 minutes. Now add most of the grated Parmesan and Pecorino and turn back down to simmer(reserve about 1/4 cup of cheese). Taste for seasoning and adjust accordingly.



Now add your fresh pasta sheets to the water two at a time and let them cook for about 5 minutes or until al dente, do not overcook them as it will lose an important texture factor and structural component of the lasagna. Remove them from the water and drain. This works well if you have a pasta insert or large strainer to pull the sheets out. Repeat until all the sheets are cooked.



In a large lasagna pan (I used a Pyrex 15"x10"x2" pan and a Pyrex 9"x9" square) add a large spoon full of the liquid from the seafood sauce to coat the bottom of the pans, this prevents the pasta from sticking to the bottom. Now add two pasta sheets making sure to overlap them in the center by about 1/2 and inch. Now trim the excess so the sheets fill the pan perfectly, but leaving no spot uncovered. Now scoop the seafood mixture on top of the pasta, spread it evenly (about 1/3 for the large and 1/6 for the small pan). Sprinkle with some of the grated cheese you had reserved. Top that with two more fresh pasta sheets, make sure to overlap the center and trim the outside to fit the pan. Add the second part of the mixture to each pan and sprinkle on more grated cheese (about 1/3 for the large and 1/6 for the small pan). Reserve about 1/2 a cup of just liquid from the seafood mix for the top. Finally add the top two sheets and spoon the reserved liquid evenly on top, sprinkle a bit more cheese on top. Place it in a preheated 350 degree oven for 25 minutes. Remove and let it stand for at least ten minutes, this will allow it to firm up and not run all over when you serve it. Garnish, slice and serve. I also made some garlic bread to go along with it so that I could soak up all the seafood goodness.



We had a total of 8 people and this dish worked out perfectly. Everyone cleaned their plates and I had a whole small pan leftover for Sunday football. It was great the second day also. Between the soup and lasagna we had a little side salad that consisted of arugula, sliced pear, red onion, toasted pumpkin seeds and a white balsamic vinaigrette. Thanks everyone for eating and cleaning, I had a great time. This may have to become a regularly scheduled event.
